In 2022 we planted a dedicated sparkling vineyard — a commitment made with full understanding of what it requires. Sparkling wine vines need time before they give anything worth taking. We are farming with patience, not urgency.
While that vineyard matures, our winemaking team — led in collaboration with consultant Sébastien Marquet — set out to make sparkling wines that reflect our palate and our standards. Working with fruit from trusted growers in the Pacific Northwest, we have crafted three wines that are genuinely ours: conceived here, made to our specification, produced with the care the traditional method demands.
When the first harvest from our dedicated sparkling vineyard is riddled, disgorged, and poured — the wines you have been drinking will have been the prelude to something we have been building since 2022.

The current Draksha range is produced using the traditional method throughout. All three wines are made from Pacific Northwest fruit while our dedicated estate sparkling vineyard — planted 2022 — matures. Availability varies by allocation.
Grüner Veltliner is the variety this estate is known for. Making it sparkling in the traditional method is a natural extension of that commitment — and the result is something that reflects both the grape and the process with precision. The variety's signature white pepper lift translates beautifully: crisp, herbal, and saline on the nose, with citrus and stone fruit on the palate, fine persistent mousse, and a finish that goes longer than the pour.
Grüner Veltliner is part of our estate vineyard. This sparkling expression is the early chapter of a wine that will increasingly reflect this specific ground as our dedicated sparkling block matures.
The flagship cuvée — whole-cluster pressed Chardonnay, tiraged into bottle for secondary fermentation, aged on the lees before disgorgement. Fine, persistent mousse. Green apple and brioche on the nose. Slate and lemon curd on the palate. Long, clean finish. Precision sparkling wine, made the way it should be made.
Pressed from Cabernet Franc and Pinot Noir, fermented to dryness before tirage. Wild strawberry, pomegranate, and crushed stone on the nose. Dry and focused on the palate, with fine persistent bubbles and a finish that lingers. Built for celebration without sacrificing seriousness.
Méthode Traditionnelle — the same process used in Champagne for centuries — is the most demanding and most honest way to make a sparkling wine. Secondary fermentation happens in the bottle. The bubbles are natural, earned through time on the lees. There are no shortcuts and no bulk carbonation. Every Draksha bottle earns its bubbles.
The result is a wine of genuine structure: fine, persistent mousse, complexity from extended lees contact, and the kind of finish that bulk-made sparkling simply cannot produce.

One club. Both labels. Draksha sparkling wines and Otium still wines are covered by a single estate membership — every release from both labels, one relationship with the estate.
Members are the first to receive every Draksha allocation — including the estate-grown releases from our dedicated sparkling vineyard as they come online. They join the disgorging events and cellar dinners held on the estate each year.
